Make This: Josh’s Banana Bread

While shopping yesterday with two of my closest friends, one of them was telling us that Bananas are one of the worst things to eat for your stomach being flat.  He claims that Bananas are so horrible, for your stomach, and during summer….avoid them at all costs!  So, naturally, that made me hungry for BANANA BREAD.  So What Who Cares.
 
Josh’s Banana Bread
Makes 1 loaf of whatevs bread you want
 
Ingredients:
1 cup raw sugar
1 tablespoon butter (nondairy)
1 cup mashed overripe bananas (2 or 3)
1 egg
1 teaspoon real vanilla extract
1 cup oat flour
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup semisweet chocolate chips
 
Directions:
1.  Preheat the oven to 350° F. Combine all of the ingredients in a bowl and mix well.
2. Cut a piece of parchment paper to fit the bottom of a loaf pan. Put it in the bottom of the pan and spray it with cooking spray. Pour in the batter and cover it loosely with foil.
3. Bake for 30 minutes. Remove the foil, then bake for another 20 minutes, or until a toothpick inserted in the middle comes out almost clean. Cool completely, then slice and serve.

Cupcake Carnivale, Mac Mart and The Sunflower Truck.

Goji or Go Home

Goji…don’t get intimidated or think that it’s dark-sided.

Here are amazing ways to serve up this superfood.

You can find goji berries (also known as the wolfberry… Schonewolf if you’re nasty) at any health food store. Like blueberries, raspberries and other berries, this superfruit is a nutrient-rich fruit — packed with antioxidants, vitamins and minerals. These red berries grow on a shrub that’s native to China, and it can be enjoyed cooked, raw or dried.

Below are a few fun recipes that highlight GOJI:

Kale Avocado Salad with Raw Olives

1) First, take the kale off of the stems. Place it in a large bowl and put salt on the leaves.

2) Start massaging the leaves so that the salt starts to “cook” the leaves, i.e., break down the leaves so that they are “wilted”.

3) Next, massage the leaves with lemon juice.

4) Then, massage the leaves with avocado until it’s well incorporated.

Taste. You might need more lemon juice or more salt.

Place it in a serving bowl and add the GOJI, tossing to combine.

Goji Strawberry Smoothie

1 1/2 cups plain or vanilla almond milk (I really like almond milk and/or hemp milk in this smoothie, but you can use another non-dairy milk if preferred)

1/2 cup water

1 1/2 cups frozen sliced banana

1 cup frozen strawberries (or fresh)

1/4 cup goji berries

2 tbsp whole flax seed

1/4 tsp cinnamon

Blender…Drink dat shit.

Goji Protein Bars

Buy:

Ingredients

1/2 C Almonds

1/2 C Cashews

1/2 C Coconut, Shredded

15 Dates

3 T agave (honey, coconut nectar, etc)

Pinch of Salt

1 T Mesquite Powder

Handful of goji berries, cocoa nibs, and white mulberries

How:

1) Process almonds and cashews together until a fine flour is formed.

2) Add everything else and process until a dough forms and it comes together.

3) Press dough into a square pan, refrigerate until set (about 1 – 2 hours)

4) Cut into bars, wrap.

Can be left out at room temp, but better is refrigerated

Bananas, potatoes and celery seem to always be in-season. For bananas, at least, I think it’s because they have to be shipped into just about everywhere.  You can send yo momma some nanners today, and she’ll love them, and she’ll kiss them, and say “Mmmmm these are always in season.”

All Your Grits About You

First, for those of you who don’t know me all that well… Grits are a very important part of my life.  And Grits are a dish of coarsely ground corn kernels boiled with water or milk.  They are very important, because I have been training with my very close friend and trainer, Domenick.  And his rules have been, “Grilled Chicken and Veggies, and one day a week, you can splurge.”  You see, I’m going on like 3 fucking vacations in the next few months, and even though my body is looking better than ever, I just wanted to push myself to the max, and I hired a talented trainer to see what my body will look like, by eating properly AND working out with him, on top of my daily hour dose of cardio.  

So, today I took this splurge rule very seriously.  And I ate Grits.  I went to Farmicia in Old City with my parents and my best friend, and I ordered Scrambled Eggs, Sausage, Bacon, and Cheddar Grits.  Took a pic of my lovely splurge and included it in this post.  I felt amazing afterwards, but I knew that I was meeting Domenick, back at the gym, to work on my not-quite-there self yet.  And I am happy as a clam.  

 

Anyway, Grits can also be made horribly.  There is a fine line, and Farmicia has drawn this line every Brunch, every Saturday and Sunday at their Old City staple.  

I did a little research and below is how to create THE PERFECT GRITS:  take notes, girl.

In a small pot, bring water, milk, and salt to a boil. Slowly stir grits into boiling mixture. Stir continuously and thoroughly until grits are well mixed. Let the pot return to a boil, cover pot with a lid, lower the temperature, and cook for approximately 30 minutes stirring occasionally. Add more water if necessary.

Grits are done when they have the consistency of smooth cream of wheat. Stir in half the butter and serve with remaining butter divided equally on top of each portion.

So, do yourself a favor and swing by Farmicia and eat up some of their Grits. Or make my recipe yourselves. Just let me know how delish they came out, and hey….if they fucking suck the first time? Keep trying.

PHILLY COFFEE SHOPS: Where to go to get your Liquid Personality!

La Colombe: 

Vibe:  Skinny model baristas, typically with cocky smirks and Earthquake eyes, probably from all of the complimentary La Colombe the get all day.  The baristas set the tone for this place…it’s a coffee shop with a cocky smirk.  They have an amazing product, and they know it.  Their coffee may cause you to never blink again.  

For:  Rittenhouse yoga moms, rich gay people, and cunty tourists

Beauty Shop Cafe: 

Vibe:   Jonathan Adler’s coffee shop, they kept the previous owner’s (beauty salon) vintage vibe and mixed it with perfectly placed everything.  The tables are all mismatched purposefully, and the people that work there are always beyond sweet.  

For:  The gentrified folks, college students, and lesbians with time to kill.

Benna’s: 

Vibe:  If Benna, one day, transformed into a person…it would morph into a college-level art teacher, who always wears her rimmed glasses and a happy demeanor to match.  I used to live around here, and the people that own it/work there are so sweet…. y’all be needing a root canal.

For:  People who like delish coffee, urban planners, art professors

Cafe 12: 

Vibe:  Four gorgeous & sweet-as-Nutella gay men run this place…and it’s smackdab in the Gayborhood.  It’s definitely a place to go to lounge and enjoy your day.  

For:  12th St. Gym members, college girls with big boobs, and gay boys

Shot Tower: 

Vibe:  Absolutely beautiful interior & beautiful owners help make your coffee seem stronger.  I was actually their very first customer, and I’ve always had a connection to this place, living across the street from it for a year.  The employees are so amazing & talented baristas, especially Cesar….whose fashion-icon outfits are enough to make you want to check this place out.  Oh yeah, and the coffee is amazing too.  

For:    Queen Village townies, people en route to Bikram, and hot gay men w/ beards

Brown Butter Bourbon Cake

Hi, make this. So yeah, if you’re interested in a boozy cake, which is also delicious….then, do I have a recipe for you. Below is what you need.

3 1/2 cups Flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 1/2 cups milk, room temperature
2 teaspoons vanilla
1 vanilla bean, split and seeds scraped
1 cup unsalted butter, softened
1 3/4 cups sugar
4 eggs, room temperature

PUT ALL THIS STUFF IN A BOWL AND STIR IT. Easy.

Preheat oven to 350. Generously butter and flour two 8-inch cake pans. Set aside.

Now the Drunky Part:

2 cups unsalted butter, softened
6 cups powdered sugar
1 tablespoon bourbon
1/2 teaspoon salt
1/4 teaspoon vanilla

Make This: Sautéed Brussel Sprouts W/ Hazelnuts

Brussel Sprouts are for smart people. They are full of vitamins, and they’re very low in calories. So if you eat them instead of Doritos, you’re on your way to greatness. The next time you’re feeling your brain forming the thought “Eat Something Fattening, Bitch,” Makr This!

YOU NEED:
1 tablespoon Olive Oil
1 pound Brussels Sprouts, halved and thinly sliced
2 tablespoons hazelnuts, chopped
1 garlic clove, thinly sliced
1 teaspoon lemon juice
1/2 teaspoon salt
1/4 teaspoon black pepper

Directions

Heat the oil in a heavy saute pan

Toss in the shredded Brussels sprouts and cook for 3 minutes.

Stir in the hazelnuts and garlic and saute for 1 minute. Yay easy.

Stir in the lemon juice and stir until fully incorporated; cook 1 more minute.

Season with salt and pepper to taste.

Then eat…and live your happy ass life.
